Ingredients

For the Dough:

  • 2 cups all-purpose flour (approximately 250g)
  • 1 teaspoon Red Star Platinum Superior Baking Yeast
  • 1 teaspoon granulated sugar
  • 1 teaspoon fine sea salt
  • 2/3 cup lukewarm water (approximately 155ml)
  • 1 tablespoon olive oil

For the Filling & Topping:

  • 1 whole head of garlic
  • 3 tablespoons olive oil divided
  • 1 cup shredded mozzarella cheese (approximately 100g)
  • ¼ cup grated Parmesan cheese (approximately 15g)

Instructions

  1. To prepare the dough, in a large mixing bowl (or the bowl of a stand mixer fitted with a dough hook), combine the all-purpose flour, granulated sugar, fine sea salt, and Red Star Platinum Superior Baking Yeast. Add the lukewarm water and begin mixing on a low speed until all the ingredients come together and form a cohesive dough. (For those without a mixer, this dough can also be kneaded effectively by hand.)
  2. Once the dough starts to come together and form a rough ball, add the initial 1 tablespoon of olive oil. Increase the mixer speed to medium and knead for 2-3 minutes. If kneading by hand, continue to knead for approximately 5 minutes until the dough becomes smooth and elastic. The ideal dough consistency should be soft, pliable, and just slightly sticky to the touch.
  3. Lightly drizzle a small amount of olive oil into a clean, large bowl. Transfer the prepared dough into this bowl, turning it once or twice to ensure it is lightly coated with oil. Cover the bowl securely with a clean kitchen towel or plastic wrap and place it in a warm, draft-free location to rise. Allow the dough to proof for 1-2 hours, or until it has visibly doubled in size.
  4. To roast the garlic, begin by preheating your oven to 400°F (200°C).
  5. Take the whole head of garlic and carefully slice off about 1/4 to 1/2 inch from the very top, just enough to expose the individual garlic cloves beneath the skin. Place the garlic head, cut side up, onto a piece of aluminum foil. Drizzle 1 tablespoon of olive oil over the exposed cloves, ensuring they are well coated. Then, wrap the garlic head tightly in the foil to create a sealed packet.
  6. Roast the foil-wrapped garlic in the preheated oven for 45-75 minutes. Start checking for doneness after 45 minutes; the garlic should be incredibly tender and a beautiful golden-brown color. For a deeper caramelization and even more intense, sweet flavor, you may continue roasting for an additional half hour if desired, keeping a close eye on it.
  7. To assemble and bake the breadsticks, once your dough has completed its first rise and the roasted garlic is ready, preheat your oven again to 400°F (200°C).
  8. Carefully remove the roasted garlic from its foil packet and allow it to cool slightly until it’s comfortable enough to handle. Gently squeeze the soft, sweet garlic cloves out of their papery skins into a small, clean bowl. Using a fork, or a garlic press if preferred, mash the roasted garlic until it forms a smooth paste. Stir in the remaining 2 tablespoons of olive oil until well combined.
  9. Lightly flour a clean work surface. Turn out the risen dough and, using a rolling pin, roll it into a neat rectangular shape, approximately 10×12 inches (25x30cm). Aim for an even thickness across the entire rectangle.
  10. Evenly spread the prepared roasted garlic and olive oil mixture over the entire surface of the rolled-out dough, leaving a small border around the edges.
  11. Generously sprinkle about half of the shredded mozzarella cheese and half of the grated Parmesan cheese over the garlic-coated dough.
  12. Carefully fold the dough in half lengthwise, ensuring that the cheesy filling is now enclosed within the dough. Using a sharp knife or a pizza cutter, cut the folded dough into 12 even strips, each approximately 1 inch wide.
  13. Gently pick up each individual strip of dough by both ends. Twist each strip several times to create an appealing spiral shape. Arrange the twisted breadsticks on a baking sheet that has been lined with a silicone mat or parchment paper, ensuring to leave some space between each breadstick to allow for expansion during baking.
