Instructions

  • To make the chocolate biscuits, begin by preheating your oven to 425°F (220°C). Prepare two baking sheets by lining them with a silicone mat or parchment paper to prevent sticking.
  • In a large mixing bowl, combine the dry ingredients: whisk together the all-purpose flour, unsweetened cocoa powder, sugar, baking powder, and kosher salt until thoroughly blended. This ensures even distribution of leavening and flavor.
  • Add the very cold, cubed butter to the flour mixture. Using a pastry cutter (or your fingertips), work the butter into the flour until the pieces resemble small peas. It’s crucial for the butter to remain cold to create flaky biscuits.
  • Pour in the cold heavy cream and mix gently until the dough just comes together. Be careful not to overmix, as this can lead to tough biscuits. Fold in the semisweet chocolate chips at this stage.
  • Turn the dough out onto a lightly floured surface. Gently pat it into a round disc about 1-inch thick. Using a round cutter (about 2 inches in diameter), divide the dough into 12 mini rounds. Arrange these rounds on your prepared baking sheets, leaving a little space between each.
  • Bake for 8-10 minutes, or until the chocolate biscuits are risen, firm, and crisp on the edges. The internal temperature should reach about 200-210°F (93-99°C). Once baked, transfer them immediately onto a wire rack to cool completely. (These biscuits can be prepared a day in advance. Store the cooled biscuits at room temperature, well covered. However, for the best texture and flavor, assemble the shortcakes just before serving.)
  • Macerate the strawberries while the biscuits are baking and cooling.

    In a medium bowl, combine the hulled and sliced Driscoll’s strawberries, sugar, and balsamic vinegar. Gently toss to coat. Let the mixture rest for at least 15 minutes, but ideally 30-60 minutes, at room temperature. This allows the strawberries to release their juices and create a beautiful syrup.

  • To make the whipped cream, ensure your heavy cream, mixing bowl, and whisk attachment are all very cold. Whisk the heavy cream in the chilled mixing bowl until soft peaks begin to form. Gradually add the sugar and continue to mix until firm, stiff peaks are achieved. Gently fold in the Greek yogurt and pure vanilla extract, mixing for another minute until the cream is smooth, luscious, and thoroughly combined. The Greek yogurt adds a lovely tang and stability.
  • To assemble the shortcakes, carefully slice each cooled biscuit in half horizontally. Spoon a generous amount of the macerated strawberries (including their delicious syrup) onto the bottom half of each chocolate biscuit. Top with a dollop of the freshly whipped cream. Carefully place the top half of the biscuit back on. For an extra touch of elegance and flavor, add another spoonful of whipped cream on top and, if desired, decorate with a few fresh strawberry slices or a drizzle of chocolate sauce.
