Ingredients
For pastry shells:
- 1 cup (240ml) water
- ½ cup (115gr) unsalted butter
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1 cup (125gr) all-purpose flour
- 4-5 large eggs, at room temperature
For filling:
- 1 cup (240ml) heavy whipping cream
- 3 tablespoons sugar
- 1 teaspoon pure vanilla extract
- Pink or blue food coloring
For decoration:
- 8 oz (226gr) pink candy melts
- 8 oz (226gr) blue candy melts
- Pink and blue sprinkles
Instructions
- Preheat oven to 375°F (190°C).
- To make the pastry shells, in a medium saucepan, combine water, butter, sugar, and salt. Bring the mixture to a rolling boil over high heat.
- Once boiling, immediately add all the flour at once. Reduce the heat to medium and stir continuously with a wooden spoon. The dough will quickly form a ball. Continue mixing vigorously for another 3-4 minutes until a light crust forms on the bottom of the pan, indicating the moisture has been cooked out.
- Transfer the hot dough into a mixing bowl (preferably stand mixer with paddle attachment). Mix on low speed for a few minutes to help it cool down to room temperature. This step is crucial to prevent the eggs from cooking when added.
- Add the eggs one at a time, beating thoroughly after each addition until fully incorporated. Do not add more than 2 eggs at once. It’s important to note that you might not need all 4-5 eggs; the dough should be smooth, glossy, and thin enough to fall from the paddle in a thick ribbon (the “bird’s beak” consistency) but not runny.
