  • 1 cup (125gr) all-purpose flour
  • 4 large eggs
  • ¼ teaspoon salt

For Filling:

  • 1 cup (240ml) heavy whipping cream, chilled
  • 4 oz (115gr) cream cheese, softened
  • ½ cup pumpkin puree
  • ½ cup (65gr) powdered sugar
  • 1 teaspoon pumpkin pie spice

Instructions

  1. To make the pastry shells: Preheat your oven to 400°F (200°C). Line 2 baking sheets with parchment paper or a silicone mat.
  2. In a medium saucepan, combine water, butter, and salt. Bring this mixture to a rolling boil over medium-high heat.
  3. Once the butter is fully melted and the mixture is boiling, add all the flour at once. Immediately reduce the heat to medium. Using a sturdy wooden spoon, stir the mixture continuously. The dough will quickly start to come together and form a cohesive ball. Continue mixing vigorously for another 3-4 minutes until a light crust forms on the bottom of the pan. This step is crucial for drying out the dough.
  4. Transfer the hot dough into a mixing bowl. If using a stand mixer, attach the paddle attachment and mix on low speed for a few minutes until the mixture cools down to room temperature. (Alternatively, you can vigorously stir with a wooden spoon – a mixer is not strictly required!) Add the eggs one at a time, beating well after each addition.   8. To make the filling: In a separate mixing bowl, using a whisk attachment (or a hand mixer), whip the chilled heavy cream until soft peaks just begin to form. Be careful not to over-whip.
  9. In another mixing bowl, beat the softened cream cheese and pumpkin puree together until the mixture is completely smooth and free of lumps.
  10. Add the powdered sugar and pumpkin pie spice to the cream cheese mixture and continue to beat until the filling is wonderfully light and fluffy.
  11. Gently fold the whipped cream into the pumpkin cream cheese mixture until everything is well combined and the filling is uniformly smooth and creamy.
  12. When you are ready to serve, slice each cooled cream puff horizontally using a serrated knife. Fill the bottom half of each puff generously with the pumpkin cream filling. Replace the tops. If desired, lightly dust with additional powdered sugar for an elegant presentation before serving immediately.
