Ingredients

For chocolate crepes:

  • 2 cups (250g) all-purpose flour
  • ¼ cup (30g) unsweetened cocoa powder
  • ¼ cup (50g) sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 large eggs, at room temperature
  • 2 ½ cups (600ml) milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons vegetable or canola oil
  • Pomegranate seeds for garnish (optional)
  • Powdered sugar for dusting (optional)

For chocolate mousse:

  • 2 tablespoons (15g) unsweetened cocoa powder
  • ¾ cup (150g) semi-sweet chocolate chips
  • 1 cup (240ml) heavy whipping cream

Instructions

  1. In a medium bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt. Set aside.
  2. In a separate mixing bowl, beat the eggs for about a minute using a whisk or an electric mixer. Stir in the milk and vanilla extract. Gradually add the dry flour mixture to the wet ingredients, beating on medium-low speed just until combined (1-2 minutes). Be careful not to overmix, as this can make the batter tough and rubbery. Using a spatula, flip the crepe and cook for another 30 seconds. Stack the cooked crepes on a plate to cool completely. You should yield approximately 20 crepes. Once cooled, crepes can be wrapped in plastic wrap and refrigerated for up to a day.
  4. To prepare the mousse filling, dissolve 2 tablespoons of cocoa powder in ¼ cup (60ml) of hot water. Mix well and set aside.
  5. Using a double boiler, gently melt the semi-sweet chocolate chips until completely smooth. Remove from heat and allow to cool slightly. Stir in the prepared cocoa mixture until fully combined.
