  • 2 tablespoons (16 g) cornstarch
  • 4 (140 g) egg whites
  • ¼ teaspoon cream of tartar (optional)
  • ¼ teaspoon kosher salt
  • ½ teaspoon pure vanilla extract
  • 1 teaspoon white distilled vinegar

For Strawberry Whipped Cream:

  • 1 cup (20 g) freeze-dried strawberries
  • 1 cup (240 ml) heavy whipping cream (cold)
  • 2 tablespoons (30 g) granulated sugar
  • Fresh strawberries, chopped, for topping

Instructions

  1. To make the Pavlova base, preheat the oven to 350°F (177°C). Line 2 baking sheets with parchment paper.
  2. In a small bowl, whisk together 1 cup granulated sugar and 2 tablespoons cornstarch. Set aside.
  3. In a large clean mixing bowl with a whisk attachment, or using a handheld electric mixer, beat the 4 egg whites until frothy.
  4. Stir in ¼ teaspoon cream of tartar and ¼ teaspoon kosher salt and continue to beat on medium-high speed. (Cream of tartar is optional here; it stabilizes the egg whites and helps them whip bigger and better.)
  5. Add the sugar/cornstarch mixture one tablespoon at a time, while the mixer is running on medium-high speed. Increase the speed to high and continue to beat the egg whites until stiff peaks form. The mixture will look smooth and shiny.
  6. Add ½ teaspoon vanilla extract and 1 teaspoon white distilled vinegar, and gently fold the mixture with a spatula.
  7. Spoon the batter into 8 rounds on the prepared baking sheets. Make a shallow well in the center of each round. (TIP: Take a little bit of meringue batter and smear under 4 corners of the parchment paper, so it doesn’t move.) Alternatively, you can put the batter into a piping bag with a decorative tip (we used a Wilton 1M tip) and pipe the nests instead.
  8. Place the baking sheets in the oven and immediately turn the oven temperature down to 300°F (150°C).
  9. Bake for 30 minutes. Then turn the oven off and let it cool for at least an hour with the oven door ajar. Store cooled mini Pavlovas in an airtight container at room temperature, or in the cooled oven, until ready to assemble.
  10. To make the strawberry whipped cream filling, run the 1 cup freeze-dried strawberries in a small food processor until powdered. Or you can place the fruits between 2 parchment paper sheets and roll with a rolling pin until a fine powder. Reserve a tablespoon or so of strawberry powder for dusting.
  11. Pour 1 cup cold heavy whipping cream into a mixing bowl.
  12. Beat the cream on low speed (speed 2 or 4 on a stand mixer) until it slightly thickens.
  13. Add 2 tablespoons granulated sugar and the prepared strawberry powder. Continue to mix on medium speed (speed 4) for a minute or two. You can increase the speed to 6 on a stand mixer until the mixture reaches stiff peaks. Keep a close eye on it; you don’t want to over-beat it, or it’ll turn into sweet butter.
