Preheat your oven to 325°F (160°C). Prepare an 8-inch (20cm) springform pan that is at least 2.5 inches (6cm) deep. Cut a long strip of parchment paper, approximately 3.5 inches (9cm) wide, to line the sides of the pan. Also, cut an 8-inch (20cm) round circle of parchment paper for the bottom. Carefully line the sides and the bottom of the springform pan with the prepared parchment paper. Set the pan aside.

Gently separate the egg whites from the yolks. Place them in separate bowls and set aside.

In a medium heatproof bowl, place the broken pieces of milk chocolate. Set this bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water. Allow the chocolate to melt slowly, stirring occasionally until smooth. Once melted, add the room temperature cream cheese to the melted chocolate. Mix thoroughly until the mixture is smooth and well combined, with no lumps of cream cheese visible.

Remove the chocolate and cream cheese mixture from the heat. Let it cool slightly for about 2-3 minutes. Then, stir in the egg yolks until they are fully incorporated into the chocolate mixture.

In a large, clean mixing bowl, using a whisk attachment on a stand mixer or a handheld electric mixer, beat the egg whites until stiff peaks form. The egg whites should be glossy and hold their shape firmly. Gently add about one-third of the whipped egg whites into the chocolate mixture and stir until just combined. Then, carefully fold in the remaining egg whites in two additions, using a spatula, until the mixture is well-combined and no white streaks of egg white are visible. Place the cake pan on the middle rack, directly above the water bath. Bake for 45 minutes. After 45 minutes, turn off the oven but leave the cake inside for an additional 30-40 minutes to cool gradually. Remove the cake from the oven, unlatch the sides of the springform pan, and gently peel off the parchment paper from the sides. Let the cake cool completely on the counter before refrigerating until it is thoroughly chilled and set, usually several hours or overnight. Before serving, carefully remove the parchment paper from the bottom and transfer the cake to a serving platter. If desired, dust with a light coating of powdered sugar.
